The Windsor Melbourne welcomes new Executive Chef
The Windsor has brought on new Executive Chef, Tom Brockbank (formerly Head Chef of Estelle by Scott Pickett’s Events division) to reinvent its restaurant and banqueting menus.
Hailing from Kent, in England’s southeast, Tom brings a modern English & Australian aesthetic and a farm-to-table ethos to The Windsor. The menus now brim with local Victorian and Australian produce, with an integrity towards ingredients being made in-house.
A recent finalist at the Chef of the Year competition (Food Service Australia, 2019), Tom has also worked at restaurants including O’Connells, No.8 by John Lawson and Pollen Street Social (2 Michelin Star). Tom is a former National Finalist of the Roux Scholarship.
